Ever throw something together that was so super simple, but then turned out so super good that you can’t help but tell others about? That is this Simple Cajun Black Bean Potato Bowl! 

Come on’ I know it has happened to you! If not, totally steal this recipe, call it your own. Impress your husband, friends, date – whomever you serve it to they will love it! (okay, maybe not your kids or those who have a big aversion to a little spice…)

So this recipe was born out of a hiking trip. Let me start from the beginning.

 
I am a planner. I always have been, and then when I had kids, it gave me an excuse to be ultra-planner. Seriously, gotta plan ahead for when they are hungry…also, I am not a big fan of eating out at a restaurant every darn meal on vacation. Not only is it unhealthy…it stretches the wallet…

 

So as we were scrambling around the night before a recent overnight hiking trip to a lodge in Illinois, my thoughts turned to what will eat on night #1? Night #2? With a family decision of night #2 we will check out the lodge restaurant, night #1 still needed to be planned.

 

I looked in the fridge and here are the ingredients I had on had:

 

  • Avocado
  • Black Beans
  • Sweet Potato
I had all those on hand. Now what could I throw together with those for a simple vegan dish?

 

Wah – la.

 

 
Bake the sweet potato. Toss the beans with Cajun spice blend. Throw the avocado in the cooler.

 

Had I not graciously told my husband he could eat the rest of this combination…we might have been fighting over who got to have the last bite! (sometimes you gotta give a little…ha!).

 

I hope you enjoy this simple combo as much as we did. Because this vegan dish was perfect for hotel heating up and being on the go!

Simple Cajun Black Bean Potato Bowl

Easy lunch or dinner recipe is protein packed and full of flavor!

Ingredients


  • 1/4 cup of black beans


  • 1/4 tsp cajun seasoning*


  • 1 large sweet potato, baked


  • 1/4 of avocado, sliced or chopped

Directions

  • Rinse clean your sweet potato, wrap in foil, bake at 400 degrees for 40 – 45 minutes.

  • While sweet potato bakes, toss beans with seasoning blend and slightly warm up via stove or microwave.
  • After sweet potato is done, slit in half, fill the ‘inside’ with bean mixture and avocado!

Notes

  • I love McCormick Perfect Pinch Cajun seasoning!
